Calamar. Chargrilled cuttlefish, morcilla, tomato, almond hummus, watercress. Love the smoky flavour. Perfect combo!

What is your favourite thing about working in this industry?

Food and wine and the people – I love human interaction and sharing the delicious San Telmo menu. Also enhancing peoples experiences through the restaurant.

Who inspires you?

I do. The challenge to know that I can always do better and be better inspires me.
