HEAD CHEF DYLAN PERRY
If you’ve ever sat in front of our parrilla, you might have spotted him: calm in the heat, eyes fixed on the flames, tending to sizzling steaks and smoky vegetables with a quiet confidence that comes from years of experience. That’s Dylan Perry. And now, after an incredible eight-year journey with us, we’re so proud to announce that Dylan is our new Head Chef.
Dylan’s story with San Telmo began when he was just a second-year apprentice, fresh from a year at Melbourne’s Coda and eager to find a kitchen where he could fuel his passion for cooking over charcoal. He immediately took the buzz of San Telmo in his stride. Over the years, he’s mastered the grill, embraced leadership, and built a reputation for respect, compassion, and a commitment to excellence.
As he progressed in the early years of his career, what started simply as a way to pay the bills quickly became a real passion. The love for food grew, as the art of cooking took on extra meaning. It became about more than flavour; connection. His style reflects this belief: bold, layered flavours, seasonal produce, and, of course, always bringing the fire. Whether it’s premium beef, fresh seafood, or vegetables transformed by the grill, every dish he touches turns to charcoal-grilled gold.
Beyond the kitchen, Dylan’s creativity is fuelled by travel – especially to South America, where he finds fresh inspiration to bring back to San Telmo. When he’s not cooking, you might find him digging into a bowl of lanzhou beef noodles, exploring live music, or hosting a BBQ for friends.
This moment is a proud one for all of us. Dylan isn’t just taking on the role of Head Chef, he’s a treasured part of our story, shaped by San Telmo’s culture and ready to lead us into an exciting new chapter.
